Jean-Luc worked for us when we were staying in our Monaco apartment in October 2002. His work has been excellent. Each evening, Jean-Luc prepared and served a three-course dinner which was well up to the standard of a top-class restaurant. He also prepared a light, three-course lunch which could be served by other employees on the following day.
While following our stated dietary requirements, he still managed to produce an amazing range of menus. He made a great use of fresh, locally-available, in-season products. Portion sizes were always appropriate. The combination of starters and main courses was well-balanced and interesting.
Jean-Luc works in both English and French and, at all times, his personal presentation was most pleasing and helpful. Each evening, Jean-Luc left the kitchen in a scrupulously clean condition.
We shall certainly hope to re-employ him at some point in the future. In the meantime, we wish him every success in his chosen career.

Jean-Luc Roncalli was our chef during the two months that we were in Cannes. He prepared dinner for us on a daily basis and, on a number of occasions, for friends and family, as well. His excellent training in all phases of his chosen career marks him as a consummate professional whose talent and standards of excellence are of the highest level. He bought all the food and produced wonderful meals, while explaining the intricacies of French cuisine.
We are unanimous in praising Jean-Luc's outstanding performance. It would not be exaggeration to say that the meals have been superb - perfectly planned, prepared with care and attention to detail, and presented with flair and imagination.
He made our visit to France truly memorable, and we returned home happier for having spent so many pleasant hours tasting what he so beautifully prepared.
