Ingredients : 1.3kg starchy potatoes (Bintje, Mona Lisa, BF15,etc) 1/2l milk, 1/2l 35% fat liquid cream, 1 whole garlic, a pinch of thyme leaves, 2 bay leaves, salt, pepper.
Method : Slice the whole garlic. Boil milk with cream, sliced garlic, thyme, bay, salt & pepper.
Maintain low heat about 20 minutes, for infusing.
Peel & slice finely the potatoes. In the baking dish, arrange successive layers. Pour the infused cream while passing it through a sieve, to cover all the potato layers.
Bake at 150°C about 90 minutes.
If the top of the gratin hasn't got a golden glazed coloration, finish cooking with broiler position.]
